I recently purchased the Microgreen Salad Mix, and wow, it exceeded my expectations! I wanted to share a quick microgreens salad recipe I came up with using this mix. Jump to Recipe below if you’re eager to try it!
I combined the microgreens with Red Acre cabbage, broccoli, kale, kohlrabi, and arugula. The result? An absolutely vibrant and crunchy base for the salad. To complement these greens, I added half an avocado, lending a creamy texture that balanced out the mix.
Salad Ingredients:
1 cup Microgreen Salad Mix
1/2 cup Red Acre cabbage, finely chopped
1/2 cup combined broccoli, kale, kohlrabi, and arugula, chopped
1/2 avocado, diced
1/4 cup feta cheese, crumbled
1/4 cup cherry tomatoes, halved
For the dressing, I whisked together extra virgin olive oil, lemon juice, a touch of maple syrup for sweetness, and seasoned with sea salt and pepper.
Salad Dressing:
3 tbsp extra virgin olive oil
2 tbsp lemon juice
1 tbsp maple syrup
Sea salt and pepper to taste
The saltiness of the feta and the sweetness of the maple syrup perfectly complemented the rich, earthy undertones of the microgreens.
